On my Linux box I use spcaview or gphoto2 and encode the movies with mencoder from the mplayer project. I use Quicktime Pro for compiling the image sequence (on either PC/Mac). Using both Mac and PC, I have found my two nest friends are Quicktime Pro and Adobe AfterEffects. If you are on mac, Quicktime Pro would let you do that.
